For a fast and easy recipe try these BBQ Chicken Quesedillas. One day I had no clue of what to do with leftover baked chicken. Following ideas from a friend of mine that can make nothing into a seven course meal I was very surprised.
All you need is:
Pulled or shredded leftover chicken
tortillas
shredded cheese...your choice
bbq sauce
Heat the chicken with bbq sauce in a med sauce pan until heated through.
Heat a skillet on med - med high and add 1 tortilla
While heating scoop a bit of the chicken onto one side of the quesedilla and top with cheese.
Fold the quesedilla and flip. Heating for another 20-30 seconds or until cheese is melted. Just be sure not to burn the tortilla.
Serve with a small salad or rice and beans.
