two things i do with the potatoes.... french fries and baked potato.

Oh, french fries, are they easy to make?  I've never made them from a potato...sad I guess huh!  Lol

they're quite easy.

i just peel the potatoes. cut them into french fry size (probably 3/4 inch). deep-fry them in hot oil then sprinkle with salt while cooking. to know if they're cooked, they should be golden brown. let the oil drip or you can out in paper towels to absorb the oil. [:)] eat with any dip you like. in my case, it's catsup and mayonnaise mix

that's 3/4 inch thick. sorry i forgot the word "thick"[:D]

I always drain french fries on kitchen towel. Otherwise they get soggy fast. And make sure the fat's hot enough between batches.

I like potato wedges too. Do them in the oven, brushed with oil and sprinkled with sea salt. Or just cube them postage stamp small and make fried potatoes. The secret is to have the frying pan on hot for the first couple of mins and then to turn them down to med-low and cover for about 10-15 mins, turning occasionally. You only need enough oil to cover the base of it once the oil is hot. Usually about three tablespoons.

I'm in the same boat, I have about 30 lbs of them right now LOL.

Have you ever made gnocchi? I haven't but since this recipe calls for 8 potatoes, I'll soon learn. [:(] I think I'd want more than tomato sauce in it though, maybe some mushrooms, onions etc.

I make gnocchi!  It's a good way to make use of leftover mashed potatoes.  I just take the potatoes and add enough flour to make it into a dough.  Cut them into 1/2 sized pieces about as wide as your finger and freeze on a waxed paper lined cookie sheet.  Once they are frozen, place in a freezer bag and store until needed.  I always serve mine with spaghetti sauce.

Oh yeah.....to cook them you just bring a pot of water to a boil, drop in the gnocchi's and as soon as they come to the surface they are done.  (A very quick minute or two)  Top with spaghetti sauce and serve.
