I always drain french fries on kitchen towel. Otherwise they get soggy fast. And make sure the fat's hot enough between batches. I like potato wedges too. Do them in the oven, brushed with oil and sprinkled with sea salt. Or just cube them postage stamp small and make fried potatoes. The secret is to have the frying pan on hot for the first couple of mins and then to turn them down to med-low and cover for about 10-15 mins, turning occasionally. You only need enough oil to cover the base of it once the oil is hot. Usually about three tablespoons. I'm in the same boat, I have about 30 lbs of them right now LOL.
